Potato Casserole Brunch


If you miss your potato casserole in the morning, you can still eat it as a brunch. Below is a simple recipe for making potato casserole brunch.





Ingredients:


  • 2 cups frozen hash brown potatoes, thawed
  • 4 eggs
  • 1 pound sausage
  • 1 can mushrooms
  • 1/2 cup milk
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions:


1. In a greased casserole baking dish, add in the potatoes then top them with onions and cheese.


2. In a skillet, add in the sausages then brown them. After that, drain and crumble them.


3. Spread the crumbled sausages over the cheese then top them with mushrooms.


4. In a medium bowl, add in the milk and eggs then season it with salt and pepper. Combine and mix well then pour this mixture over the top of the casserole.


5. Bake for 30 minutes at 350°F (177°C).


6. Serve and enjoy.
